Energy Bites

For those of you missing cooking at Boost, you can follow along with the video and make yummy Energy Bites.

Energy Bites

1 Cup old-fashioned oats
1/3 cup ground flaxseed meal
2/3 to 1 cup nut butter--I used peanut butter
1/4 cup honey
1/4 tsp. vanilla
Pinch of Salt
Add ins: mini chocolate chips; dried fruit; coconut; chopped nuts; mini m&m's; etc.

1. In a blender or food processor, add the oats and process until coarsely chopped.
2. Put oatmeal in bowl. Add flaxseed meal, nut butter, honey, vanilla, and salt. Mix until mixture comes together in a ball.
3. If the mixture is dry add peanut butter 1 Tablespoon at a time and mix until consistency is soft but not overly sticky or crumbly.
4. Add add in ingredients and mix until combined.
5. Roll the dough into small balls and place on parchment-lined plate or tray. Refrigerate until firm. They can be frozen for several months or refrigerated for several days.
